Banana Yogurt, Chocolate, Cranberry Cookies

Ingredients

  • 50g butter, softened

  • 50ml oil
  • ½ cup brown sugar
  • ½ cup white sugar
  • 1cup EasiYo Banana yogurt 
  • 2tsp vanilla
  • 1½ cup flour
  • ¾ cup ground almonds
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 1cup chopped 70% dark chocolate
  • 1cup dried cranberries
  • Extra dark chocolate for top

Method

Preheat and oven to 170°C. 

 

Cream butter, oil, sugars, bicarbonate of soda and vanilla together until light and creamy.  Stir in yogurt. 

 

Mix the dry ingredients together in a separate bowl, and stir into the butter and yogurt mix. 

 

It is a sticky mixture, so use a small spring loaded ice cream scoop to drop the cookie portions onto a paper lined baking tray.  Top with extra dark chocolate chunks. 

 

Place in the oven for 15-20 mins.  Cooking time depends on whether you prefer a softer cookie (lighter colour in the middle) or a crunchier cookie (golden brown all the way through).  Makes around 30 cookies.

 

Tip: stir 2 heaped tablespoons of yogurt into a glass of cold milk for a quick smoothie.
