Peanut Satay Kebabs


Peanut Satay

  • ½ cup EasiYo Greek Style Natural Yogurt
  • 2 Tbsp Peanut Butter
  • 1 Tbsp red curry paste
  • 1 tsp hoisin sauce
  • Salt & Pepper


  • 1 block tofu (250g), diced 3-4cm
  • 1 green capsicum, sliced 3-4cm pieces
  • 1 red onion, sliced 3-4cm pieces
  • 4-6 wooden skewers, pre-soaked

To Serve (optional)

  • 1 lime, quartered
  • Mint leaves to garnish


  1. Whisk all satay ingredients together and season with salt and pepper to taste. Toss prepared tofu through the sauce to coat and set aside to chill in the fridge for one hour.
  2. Assemble the kebabs by alternating the marinated tofu and prepared vegetables on the skewers.
  3. Heat a large griddle pan with a little oil. Cook kebabs 3-4 minutes each side.
  4. Serve with any remaining peanut satay on the side to dip, a sprinkle of mint and a squeeze of lime.
