Labneh

Ingredients

  • 500g (2 cups) of EasiYo Greek Style Natural Yogurt (freshly made and chilled)    
For savoury labneh:
  • 1 small crushed garlic clove
  • ½ tsp lemon zest
  • ½ tsp salt 
For sweet style labneh:
  • 1 Tbsp honey
  • ½ tsp cinnamon
  • 1 pinch of orange zest                   
Method
  1. Place a sieve over a bowl and line the inside with a generous piece of clean muslin or a new kitchen dish cloth.
  2. Pour the yogurt into the lined sieve and secure the cloth around to make a ball twisting the top to extract the liquid (whey) leave overnight in the fridge. The longer it drains the firmer the cheese will be.  
  • Try the savoury cheese on bagels with smoked salmon, micro greens and capers, avocado and ham, or vine tomatoes and basil.
  • For sweet versions top with strawberry jam, sliced banana, or a drizzle of honey over toast or a crumpet. It’s also delicious on scones, muffins, or toasted fruit bread.
  • Store in the fridge and use within 3 days.

Don't discard the whey that has drained - this is great to use as some extra protein in a smoothie!
