Breakfast Raspberry Yogurt Fool

Ingredients

  • 2 cup EasiYo Raspberry Yogurt
  • ½ cup crème fraiche
  • 2 cup frozen mixed berries
  • ½ cup water
  • 2-3 Tbsp sugar
  • 1 Tbsp cornflour, diluted in little water
  • Squeeze lemon
  • 1 Tbsp butter
  • 1 Tbsp honey
  • 1/4 tsp cinnamon
  • ½ cup muesli
  • 1 Tbsp chia seeds
  • ¼ cup chopped almonds
  • Fresh berries for the top

Method

  1. Whisk together the yogurt and crème fraiche.  
  2. Put berries, water and sugar in a saucepan and gently bring to the boil.  Stir in the cornflour and water mix and cook until thickened.  Pour into a container and cover. Refrigerate. 
  3. Put butter and honey into a saucepan and heat until melted.  Stir in the remaining ingredients.  Spread out onto baking paper and bake at 160°C until golden and crisp.  Store in an airtight container.
  4. Layer the yogurt and berry mixture by spooning into the glasses alternately.  Top with muesli clusters and fresh berries. 
  5. Serve.
