Boysenberry Sponge Swirl

Ingredients

  • 1 packet Boysenberry Jelly Crystals (85g)
  • 1¼ cups boiling water
  • 375ml EasiYo Greek Style Unsweetened Yogurt
  • Small sponge cake, cut into slices or cubes

Method

  1. Dissolve the jelly crystals in the boiling water and set aside to cool. Reserve 2 tablespoons of the jelly mixture for decorating.
  2. Once cooled, gently fold the EasiYo Greek Style Unsweetened Yogurt through the remaining jelly, leaving a few swirls for a marbled effect.
  3. Layer the sponge cake in the base of a serving bowl or individual glasses, then spoon over the yogurt and jelly mixture.
  4. Refrigerate until set.
  5. To finish, drizzle over the reserved jelly crystals for a decorative finish.

Serve chilled.
