Beef Stroganoff
Get your simmer on with EasiYo’s classic beef stroganoff recipe. It's thick, creamy and a perfect way to warm up those week nights! It may just become your next dinner go-to!

Ingredients
- 500g sirloin steaks, thinly sliced
- 2 Tbsp butter
- 2 shallots, sliced
- 2 cloves of garlic, minced
- 300g brown swiss mushrooms, sliced
- 2 tsp flour
- 1 tsp sweet paprika
- 125mL beef stock
- 1 Tbsp Worcestershire sauce
- 1 Tbsp tomato paste
- 2 Tbsp thyme, chopped
- 125ml EasiYo Greek Style Natural Yogurt
Method
- Season beef with salt and pepper.
- Heat a bit of oil in a nonstick pan on medium heat, and cook beef for 2-3 minutes. You may need to do this in batches. Transfer the beef to a warm plate and set aside.
- In the same pan, reduce the heat and melt the butter. Add the shallots, garlic and mushrooms and cook for 5-7 minutes, until soft.
- Return the beef to the pan and sprinkle over the flour. Stir and then add the paprika, stock, Worcestershire sauce and tomato paste. Stir to combine and cook for a further 2-3 minutes.
- Add the yogurt to the pan slowly and stir through. Heat gently until thickened without boiling.
- Serve stroganoff on pasta or mashed potatoes and garnish with extra yogurt and thyme.
