Ingredients

  • 50g cucumber
  • 1 clove garlic, crushed
  • 1 tbsp chopped chives
  • 1tbsp coriander
  • 3 large mint leaves, chopped
  • 2 tsp lemon juice
  • ½ cup EasiYo Greek Style yogurt
  • Drizzle of Olive Oil
  • Salt and pepper

Method

Peel the cucumber and remove the seeds.  Grate with a fine grater and squeeze the cucumber in your hand to remove the excess water.  Mix all remaining ingredients together.  Refrigerate until needed.  Drizzle with olive oil to serve. 

 

Serve with Coconut & Lime Marinated Tandoori Chicken and Naan Bread
