Winter Dried Fruit Compote with EasiYo
 

Ingredients

               
Compote:
  • 230g (1.5 cups) dried fruit (apricots, dates, prunes, cranberries, fig and mango)
  • 240ml (1.5 cups) water  
  • 1 cinnamon stick
  • 1 star anise
  • 2 Tbs honey
  • 1 piece of orange peel
Cereal Biscuits:
  • 2 egg whites
  • 1 Tbsp caster sugar
  • 1 pinch of cinnamon
  • 135g (1.5 cups) of your favourite toasted muesli
      

Method

 

Compote: Simmer the dried fruit with water, cinnamon, anise, honey and orange peel until glossy and syrupy.

 

Cereal biscuits: Simply place the egg whites in a large bowl with caster sugar in the muesli and mix until white and foamy.

Stir in the muesli and mix until well coated.

Place spoonfuls on a lined baking tray ans spread out into even circles with the back of a spoon.               

Bake at 170°C for 8-12 minutes or until golden. Let cool and set then store in an air tight container for up to a week.

Serve your favourite EasiYo yogurt with a good spoonful of compote and a cereal biscuit on the side.
